The dry jam It is a form of preparation of fruits that allows them to be preserved for consumption, either alone or in combination with breads or cookies. While you may have a presentation similar to candy known as gummies, it lacks coloring, flavoring, and chemical preservatives in its composition.
Unlike jam traditional, the dried jam acquires a solid consistency that allows it to be cut and presented in the form of cubes, rectangles or bars. In the Caribbean countries we know it more commonly by the name of sandwich.
How to prepare a dry jam
This preparation is obtained from the cooking of the juice or pulp of a fruit fresh with sugar. In some cases, solidifying substances such as gelatin or pectin can be incorporated into the mixture to achieve a more solid consistency.
The fruits are initially washed well washed and cooked in WaterOnce soft, they are drained, the pulp is crushed obtaining a puree that is brought back to the fire with sugar to taste, the shells and seeds are discarded. This mixture should be cooked over medium or low heat with constant stirring until a firm consistency is obtained.

Once cut, the other sides are sprinkled with sugar so that its surface is completely covered, giving it a beautiful grainy appearance.

Many fruits can be prepared under the technique of the dried jam. Fruits such as apples, pears, peaches, apricots, quince, and figs are good options, as they are delicious and achieve a beautiful coloring.
Also, dried jam can be obtained using tropical fruits. One of the most used in this technique for its delicious flavor is guava, which can be presented alone or in combination with dulce de leche.
Other widely used fruits are the orange, which provides a large amount of nutrients and vitamins with a delicious flavor and mango, which is used both green and when it begins to ripen.
Bananas are another favorite when making dry jam, they provide a great-tasting jam with less sweetness, even once cut the sandwiches can be wrapped in dried banana leaf giving it a beautiful presentation.
