Example of Chicken Breasts Stuffed with Goat Cheese in Poblano Chili Sauce

INGREDIENTS
- 4 boneless and flattened chicken breast fillets.
- 3 poblano peppers roasted, peeled, deveined and sliced into strips.
- 1 natural goat cheese.
- ½ liter of liquid cream.
- 1 can of sweet corn kernels.
- 1 chopped onion.
- Salt and pepper to taste.
PREPARATION MODE
1.. Season the chicken breast fillets to taste.
2. In a frying pan with hot oil, fry the onion.
3. A handful of poblano pepper strips are set aside, the rest are incorporated into the pan when the onion is seasoned.
4. When the chili is soft, it is placed, together with the onion, in the blender; add the cream, salt and pepper to taste and blend.
5. Put the sauce in the pan over low heat, add the chili strips that we set aside and the sweet corn kernels. It is expected to boil and is removed from the heat.
6. Cut the goat cheese into 4 equal parts.
7. A piece of goat cheese is placed in the center of each breast fillet, the breast fillets are rolled and secured with a wooden toothpick.
8. In a pan with hot oil, place the four rolled breast fillets until they are golden brown on all 4 sides.
9. Once the breast rolls are browned, we place them in a baking dish and bathe them with the sauce.
10. We place the refractory in the oven at 200º for 30 minutes.
11. It is served with white rice.
